SLOW COOKERSPLIT PEA CURRY

Ingredients
- 1 1/2 cups split peas, dried
- 1 28 oz can tomatoes, crushed
- 15 15 oz can coconut milk
- 1/2 cup onion, sweet; diced
- 3 cloves garlic, minced
- 1 tbsp curry paste, green
- 1 tbsp turmeric
- 2 tsps curry powder
- 1/2 tsp ginger, ground
- 1/2 tsp salt, or more to taste
- 1 cupc ream, heavy
- 3 cups rice, basmati
- cilantro, fresh; for garnish, optional
Directions
- Place all ingredients except cream, rice and cilantro in slow cooker
- Cover and cook on high for 3-4 hours or low for 6-8 until peas are tender
- Stir in cream (or to make it vegan you could use refrigerated plain coconut milk)
- Cook rice according to package directions
- Serve rice topped with split pea curry and garnish with cilantro
