SLOW COOKERSPLIT PEA CURRY

Ingredients

  • 1 1/2 cups split peas, dried
  • 1 28 oz can tomatoes, crushed
  • 15 15 oz can coconut milk
  • 1/2 cup onion, sweet; diced
  • 3 cloves garlic, minced
  • 1 tbsp curry paste, green
  • 1 tbsp turmeric
  • 2 tsps curry powder
  • 1/2 tsp ginger, ground
  • 1/2 tsp salt, or more to taste
  • 1 cupc ream, heavy
  • 3 cups rice, basmati
  • cilantro, fresh; for garnish, optional

Directions

  1. Place all ingredients except cream, rice and cilantro in slow cooker
  2. Cover and cook on high for 3-4 hours or low for 6-8 until peas are tender
  3. Stir in cream (or to make it vegan you could use refrigerated plain coconut milk)
  4. Cook rice according to package directions
  5. Serve rice topped with split pea curry and garnish with cilantro
